How can a rural Yorkshire pub become one of the UK’s most exciting new food destinations in less than a year?

The Morning Advertiser’s (MA) video series On the Pass continues with a visit to the General Tarleton in North Yorkshire.

In this episode, executive chef Aled Williams discusses the recipe behind the General Tarleton’s rapid success, including local sourcing, guest chef collaborations and what makes a great countryside pub.

Part of Jeopardy Hospitality, the General Tarleton was recently named One to Watch at this year’s Top 50 Gastropubs awards and has quickly established itself as one of the country’s most exciting new food-led pubs.

Discussing the venue’s appeal, Williams said: “I think people come here and can see that we have a team that actually truly cares.

“I think Yorkshire pubs are all about the hospitality. You feel welcome, you feel happy to be there, you feel like you want to stay there for hours.”

The episode also explores the General Tarleton’s approach to local sourcing and sustainability, with Williams explaining how working closely with nearby producers helps create a stronger connection between guests and the region.

Speaking about the pub’s supplier relationships, he said: “If you have a specific breed of animal or a specific mushroom that’s grown on our doorstep, you actually get a taste of the area.

“It doesn’t get better than that for a chef. Picked that morning, delivered to us and on the menu by lunchtime.”

Guest chef series

A major focus of the episode is the pub’s guest chef series, which has already welcomed Northcote executive chef Lisa Goodwin-Allen and last week hosted Fallow chef in residence Nokx Majozi, with Angela Hartnett set to appear later this year.

Explaining the thinking behind the initiative, Williams said: “It’s inspirational for everybody.

“These are people that we buy their books, we follow them on Instagram. When they come into the kitchen, you get inspired not only by how they cook, but how they present themselves, how they hold a knife. It’s not just about what goes on the plate.”
