Mark Sargeant, owner of the Duke William, Ickham
"This is a personal thing: pubs should serve pub food. Pubs in the old days were synonymous with oysters and pints of prawns and dressed crabs. The food in pubs shouldn’t just be heavy- steak and kidney pie and bangers and mash and those things but that is the sort of stuff that fits in nicely in a pub.
"For me the pub is a home away from home and the food should be home. So for me the biggest crime against pub food is when you’re trying to run it like a restaurant and do fancy food and still retain an old fashioned pub identity. I don’t like to see that side of food inside a pub."
