Former Petersham Nurseries chef Claude Compton has said he would look to open more pubs if his initial site in Fulham is a success.

The team behind restaurant Claude’s Kitchen and champagne bar Amuse Bouche will open Tommy Tucker on 15 January.

Compton said he and business partners Jim Morris and George McCabe had set out to create “the kind of pub we would like to visit”.

He said: “It’s not just going to be about the food – what we are going for is the total package. It’s going to have a great selection of beers and wines and we will be infusing our own gin and bourbon in barrels to create some fun cocktails.

“The site looks great – we have put a lot of work into it, including putting in brand new kitchen. It was a pub before but hasn’t had any work done to it in about 30 years.”

On the food, Compton said: “It will very much be the same ethos as Claude’s Kitchen in that it will be ingredient led. We will use the freshest fish and local produce and that will dictate the menu, not the other way around.”

The 80-cover site, which will be open for lunch and dinner, will also boast a conditioned cellar for customers to store and sell their own wine, with a transparent mark-up on the price.

Jim Morris said: “Claude and I have now lived in South West London for years and love the fact there is such a sense of community here. The good old neighbourhood pub is a fundamental part of building a sense of community in a busy city, and we are so excited to be able to achieve this with Tommy Tucker.”
