With Halloween festivities over for another year, pumpkins across the land are being thrown out and left to rot. However, There are loads of great dishes pubs can make with this seasonal ingredient.

As well as saving money and reducing waste, these festive dishes could be a hearty addition to your pubs winter menu. So resist the urge to thrown out your Jack O’Lantern and put it to good use in the kitchen.

1) Pumpkin risotto

A creamy and warming risotto can be given an autumnal twist with the addition of pumpkin purée. Try it with bacon and leeks, or mushrooms for a vegetarian option that is cheap to make, but full in flavour.

2) Pumpkin soup

The soft, velvety texture of pumpkin makes for a deliciously creamy soup. Serve it with a generous portion of sourdough bread and toasted sweetcorn sprinkled over the top as a healthy but delicious lunchtime offering.

3) Roasted pumpkin seeds

This simple bar snack can be made by coating the seeds in oil and herbs and roasting them in the oven. 

4) Baked pumpkin and ginger tart

A devilishly good dessert option, a pumpkin tart can be made with a sweet shortcrust pastry to save time. Add spices like ginger and nutmeg to make this pudding popular into the Christmas months.

5) Roasted pumpkin wedges

Everyone loves sweet potato wedges, so why not try something similar with your leftover pumpkins? Add garlic and chilli for bite, and roast the wedges in the oven for a crispy side dish or bar snack.

6) Pumpkin beef chilli

A unique twist on a classic pub dish, this easy recipe updates tradition with the addition of chipotle chillies and pumpkin chunks. Why not also try adding pumpkin beer and slow cooking to really let the flavours mature?
