The purpose, innovation and passion demonstrated by the Brucan team really stood out during the HQ visits and final judging.

Knowledge and enthusiasm

The judges were particularly impressed by the knowledge and enthusiasm that filtered down to the rest of the business.

Sourcing and kitchen standards were easily the best in class for this category, making it stand out from the other finalists.

The judges also supported the sentiment of HQ visits and noted that training, food waste, and sustainability were Brucan's strengths. This was brought to life through a panel that demonstrated how food was its primary strength.

Brucan's commitment to sourcing locally, including rare breeds and regenerative farming, was a notable strength.

The judges were also impressed by the firm's emphasis on butchery skills and the whole carcasses of rare breeds, which is a fundamental part of the training process, even for the apprentices.

Brucan's menu caters to various dietary requirements, and it offers different events like summer jazz nights, secret supper clubs, and winter warmer set menus with drinks included. It also has a strict food waste policy, and any waste that can be composted is.

The pubs are actively involved in the community, partnering with local charities to provide food for up to 40 people per week, and they have a zero-plastic policy.
