Hospitality consultant Ali Carter has launched a new book aimed at food-led pubs.

‘Eat Your Competition for Lunch’ contains Carter’s ‘27 Golden Rules to running a successful and profitable food business’, in an economic landscape where an estimated 60% of independent restaurants, pubs, and cafés fail within the first year.

It features insight and tips on areas including dish costing, things to ask your accountant, profit vampires, how to write a great menu,  pricing tricks, menu engineering, marketing and food safety.

Winning insight

Carter, who is a regular columnist for the Publican’s Morning Advertiser and a former BII Licensee of Year, has run three pubs including freehouse the Bay View Inn in Bude, Cornwall, which she went on to sell it for £1m more than it was bought for.

She now works as a freelance hospitality training and consultancy specialist and is a judge for the Publican’s Morning Advertiser’s Publican Awards and Great British Pub Awards.

Carter said: “Too many think that they will make profit by simply working harder and applying the stuff they already know – the book aims to help them see that by expanding their own knowledge and investing in themselves they can be the very best.”
