Where did the idea come from?: Well, we found a pub which was reusing the meat left over from the Sunday roast on a Tuesday Curry night. It seemed to be working, so we started thinking about whether we could do something alongsimilar lines. We decided on Thursdays because we found out that this would be the optimum time, sales wise. So is the meat in your curries leftovers, then?: No, of course not! Meals arepre-prepared for us off site in Manchester to authentic Punjabi recipes. We go from very mild korma to much hotter dishes. How has the offer developed since you launched it?: We started off with five curries, now we have eight and we're introducing a ninth soon. As well as that, we trial unusual dishes all the time, and the popular ones are considered for inclusion on the Curry Club menu. As well as curry and rice, customers get a nan and a drink, all for a set price, which start at £3.99. Some of the club nights are tied in with fundraising events for charity. It works differently in Scotland now because of the licensing authorities' approach to promos involving alcohol. What's the most popular dish: Chicken Tikka Massala ­ we're trying to tempt people in other directions, but this always comes out on top. We're putting on things like Great Chicken Xacuti and Lamb Chicciando, for example. Sometimes we put on prizes for people who can eat our hottest curry without taking a drink, but people will generally go for what they like. We serve4.5 million curries a year now. Do managers get rewards for selling lots of curries? Yes ­ we have a league, and the manager and the kitchen manager at the top venues might, for example go to the Theatre of Dreams at Old Trafford. If they're Tottenham fans, they might choose to go to the Spurs v Man United game. They would go up for the weekend, go to the match, maybe see a bit of nightlife.
