Burts switches to local salt for crisps

Burts Chips has strengthened its provenance credentials by switching to locally-sourced salt in its top-selling crisp flavour.

Working with the Cornish Sea Salt Company, the Devonshire-based business said it now offers a "more intense flavour" of its Sea Salt crisps, without adding to its salt content.

This is down to the fact that the crystals produced in Cornish Sea Salt are smaller than those in standard table salt, Burts claimed.

The salt is extracted from the Cornish Sea Salt Company’s eco-friendly, purpose-built harvesting plant close to the Lizard Peninsula.

Marketing director Leane Bramhall explained that with both Burts and Cornish Sea Salt originating from the south-west of England, the collaboration was a natural fit.

She said: "The tie-up not only reinforces Burts provenance credentials but also its commitment to using only the finest ingredients to deliver superior flavours."

Bramhall added: "The salt crystals in Cornish Sea Salt are smaller than those in standard table salt, and when added to food the flavour dissolves on your tongue rather than in your stomach.

"Along with its mineral profile, this results in a more intense flavour meaning less salt can be used to achieve a similar seasoning profile."

According to Bramhall, Burts was one of the first brands on the market to tap in to the trend towards high quality ingredients with strong traceability credentials.

The brand sources the chillies used in its Firecracker Lobster flavour from the South Devon Chilli Farm. Additionally, it uses real chorizo in its Spicy Chorizo flavour.

The seven-strong crisps range is available in 40g and 150g packets.

New dessert mixes from Lactalis

UK distributor Lactalis Foodservice has introduced a number of Continental dessert mixes to help chefs reduce their prep-times.

Two of the dessert mixes – Tiramisu au Mascarpone and Panna Cotta – are manufactured by Italian producer Galbani. 

Made from 65% Mascarpone, Tiramisu au Marscarpone is said to be a "light and creamy tasting dessert", while "creamy and fresh-tasting" Panna Cotta is claimed to be quick and simple to make.

Lactalis said Panna Cotta can be served with a range of accompaniments such as fruit coulis and cream liqueurs, meaning the dessert can be adapted simply to appeal to both adults and children.

Lactalis is also making available French-style desserts from Président in the form of two crème brulee options, and a cheesecake mix.

Crème Brulee with Vanilla Pods is said to have "the soft, subtle taste of natural vanilla and cream that you would expect from a crème brulee made from scratch".

Crème Brulee with Salted Butter Caramel is made with real salted butter caramel, producing what Lactalis described as "a rich toffee taste and smooth, creamy texture".

Both crème brulees are also made with real cream and are ready to use in 10 minutes.

With a 60% cream cheese content, Président Cheesecake preparation mixes in two to four minutes (depending on the required texture). According to Lactalis, this saves precious time in the kitchen and gives chefs the opportunity to stamp their own ideas and creativity on what is an "all-time classic dessert".

As all the products are ambient and with much of the range setting in as little as two hours, outlets are able to react quickly to customer demand, the distributor added.
